
Vegan Dinner Rolls

INGREDIENTS
- 1 1/2 cups green bananas green plantain bananas are best)
- 1/4 cup extra-virgin olive oil
- 1/2 teaspoon salt
- 1/3 cup coconut milk or substitute with 1/4 Hilk (Visit www.allnaturalfoods.com.au for simple and easy hilk recipe.
- 1 cup cassava flour
METHOD
Preheat oven to 425F.
Step 1
Combine plantain, olive oil, salt and coconut milk in a blender and blend on high for 1-2 minutes, until a completely smooth puree.
Step 2
Invert puree into a mixing bowl. Add cassava flour and work into the puree until a sticky dough forms.
Step 3
Divide dough into six and roll each part into a ball (about 40cm in diameter). Place on a baking sheet. If desired, score each ball with a sharp knife about 10cm deep at the top of each ball.
Step 4
Bake for 25 minutes.
Step 5
Remove from oven and let cool at least 5 minutes before serving.
